Saddleback pig, pork, baconToday Andrew’s trying something a little bit different to really tickle your taste buds. He’s butchering a rare breed saddle back pig. The breed was created by Lord Western when he crossed Neapolitan pigs with Essex sows. The resultant offspring were known as good first prokers, baconers and heavy pigs. They are known for their distinctive white band and the meat has a rich texture and subtle flavours. If you’d like to try some pork from a saddleback, now’s a great time to drop into the shop.
